Tofu ScrambleI love having a weekend morning when there is nowhere to go and nothing to do. It does not happen often in my house, so when it does I try to savor every moment. I like to start my morning with an extra long yoga practice and then lounge around drinking coffee and reading the paper. The only thing that makes these types of mornings better is a big delicious home-cooked breakfast. Today that meant a veggie filled tofu scramble that was so delicious that it was a real test of my willpower to not eat the whole thing. Check out the recipe below! Ingredients:

NOTES: * This would be equally delicious with other vegetables or greens that you have on hand. * If you are only making this for 1 or 2 people the leftovers make a great stuffing for peppers!

I strongly believe in the power of food for well-being. What we put into our bodies matters. A lot. Diet can either fight disease or cause it. One of the most simplistic approaches to good health and happiness is eat a well balanced diet, eat locally sourced and organic foods as much as possible, and to eat foods as close to their natural state as possible.
