It is hard to believe that it is already mid August! This summer is really flying by. Funny how that always seems to happen. This is the time of year when we are being inundated with reminders that the summer is fleeting from all of the flyers for back to school supplies, articles about packing lunches, clearance sales on all things summer, and Halloween candy displays (YES! Already!). I for one am choosing to focus on the fact that there are still 6 weeks of summer left. I am going to enjoy every last minute of it, especially the late summer bounty. The farmers markets are overflowing with beautiful, delicious, inexpensive produce at this time of year. Today as I was pondering what to do with all of the random leftover scraps of vegetables and herbs that were lurking in my fridge I was inspired to make these paninis. SUPER easy and delicious!
